How Do You Like Them Apples?

Oh so simple. Oh so good. I wanted a rich dessert but a week of rainy, gray days + sugar just make me feel sticky and lethargic. But I want it all: my temptation satisfied without feeling like a big ball of goo afterwards. This quick and easy recipe hit my sweet, tangy, juicy, crunchy cravings all while delivering oodles of energy. The fiber and natural sugars helped me avoid a crash. I like using this simple creation as breakfast, snack, dessert, or a post workout fuel option. Or on this particular day, to stave off hunger while I cooked dinner!

I save my little cardboard produce trays to reuse like paper plates before recycling. Comes in handy especially with the kids when we have snacks in the car or outside on the patio (as well as for palettes for painting crafts). The toppings stick right onto the nut butter and also keep the nut butter from oozing off. Less mess. Awesome.

I used a melon baller as a tool to scoop out the core while wasting very little of the apple and creating a little nut butter ready crater.

 How Do You Like Them Apples?

Repeat for as many apples as you’d like! Makes a pretty presentation 🙂

 

Ingredients:

1 apple, halved

2 tbsp almond butter (or nut butter of choice)

1 tsp chia seeds (or hemp seeds)

1/4 cup (or 4 tbsp) granola

Sprinkle of cinnamon

1/2 tsp honey (optional)

 

Directions:

Scoop out seeds and the surrounding tough part of the fruit with a melon baller, grapefruit spoon, or carefully with a knife.

Spread on 1 tbsp nut butter of choice onto each half apple.

Sprinkle with granola, chia or hemp seeds, sprinkle of cinnamon, and a drizzle of honey if you’d like!
